Cumquat and Pea Shoots Salad

Cumquat and Pea Shoot Salad | A Life (Time) of Cooking | Salads | Recipes | Vegetarian

While I was doing some pre-prepping of food for dinner on the 25th, I needed a snack badly. I had been shopping during the morning, and picked up some pea shoots on a whim. As I continued to work, I threw together a couple of quick dishes. The surprise was the cumquats with pea shoots. This is how it went:

Steamed Thai Eggplant and Zucchine with Chilli Sambal | A Life (Time) of Cooking | Side Dish or Salad | Recipes | Vegetarian

In this pic, I have added some steamed Thai eggplants and zucchini with chilli sambal. You can see the recipe for this tomorrow, and I recommend the Cumquat and Pea Shoot Salad as a dish on its own — it is so good that it is best not to add additional flavours.

Cuisine: general
Prep time:3 mins
Cooking time: 0 mins
Serves:as many as you wish, easily adjustable

ingredients
cumquats that are on the sweeter side of sour
pea shoots
Walnut Oil
Mirin (optional)

Method
Layer pea shoots on a lovely shallow dish.

Tiny dice the cumquats. Spread these over the peashoots.

Drizzle with some walnut oil and a little mirin. If  you don’t have mirim, substitute with some juice from leftover cumquats. Don’t use vinegar, it is too tart for the cumquats.

Serve! Enjoy!
