Strawberry or Raspberry Sorbet

I fell in love with making ices after living and working in France. This one is wonderful. Enjoy it!

It’s interesting that strawberries in late Feb through March are quite delicious if you look around for the right ones. I love sorbet. Give me sorbet any day over icecream or gelatti.

Strawberry or Raspberry Sorbet

500g strawberries or raspberries 285g (10 oz) sugar 120 ml (0.25 pint) water
juice 1 lemon juice 1 orange 4 Tblspn orange liqueur or kirsch

Liquidise the fruit in a blender. Make a syrup of the sugar and water, or better still, use liquid glucose. When it is cool, add the fruit puree and the orange juice. Strain through a sieve.

Taste, and adjust sweetness with lemon juice or additional sugar syrup. If too thick, dilute with a little extra water.

Place in the icecream maker. About half way through the freezing process, gradually add the liqueur to the icecream maker. Continue freezing until ready to transfer to the freezer.
