The day before Xmas, I was doing some pre-prepping of food for Xmas lunch, and I needed a snack badly. I had been shopping during the morning, and picked up some pea shoots on a whim. As I continued to work, I threw together a couple of quick dishes to keep the hunger at bay. The surprise was the cumquats with pea shoots. This is how it went:
In this pic, I have added some steamed Thai eggplants and zucchini with chilli sambal. I recommend the Cumquat and Pea Shoot Salad as a dish on its own — it is so good that it is best not to add additional flavours.
Cumquat and Pea Shoots Salad
Prep time:3 mins
Cooking time: 0 mins
Serves:as many as you wish, easily adjustable
cumquats that are on the sweeter side of sour
Layer pea shoots on a lovely shallow dish.
Tiny dice the cumquats. Spread these over the peashoots.
Drizzle with some walnut oil and a little mirin. If you don’t have mirim, substitute with some juice from leftover cumquats. Don’t use vinegar, it is too tart for the cumquats.
