This dressing is so delicious you will want to smother your salad in it. The trick is to sweeten the dressing with a little honey.

Lemony Yoghurt Dressing

Take 3/4 cup of thick yoghurt (use Greek Yoghurt if you can). Mix with about 1/2 tspn of finely grated lemon rind, 2 Tblspns lemon juice, 1 Tblspn of honey and a good pinch of freshly ground black pepper.

If your honey is a little thick, melt it over hot water or in the microwave for a few seconds, until it is a consistency that can be mixed through the yoghurt.

Dress your salad.
