Enjoy this very simple but delicious summery salsa with the tropical flavours of pawpaw, ginger and a touch of chilli.
Take some chopped pawpaw and mix with Thai basil leaves, chopped fresh red chilli, shredded fresh ginger and spiced shallots or red onion. Toss with green coriander leaves. Dress with a mixture of lime juice, jaggery or palm sugar and toasted sesame oil.
You can add a little of Vietnamese hot mint as well if you have it on hand.
You can add some seeded, finely diced cucumber too if you wish. I prefer it without.
