The morning is hot and still. Clouds dot the blue sky. I love the stillness of the mornings and begin the day in the kitchen with a coffee in one hand and some cucumbers in the other. Red onions and mustard sit on he Kitchen Bench.

Cucumber  and Red Onion Salad with Mustard

Take some cucumbers and slice them thin. A mandoline helps here. Peel and seed the cucumbers first if they are old or large. Toss with red onion and salt and let sit for between 20 and 60 minutes. Rinse, dry and dress with cider vinegar mixed with dijon mustard. That is all you need.
