Cucumber and Red Radish Slightly Pickled Salad

Take a long cucumber, a red onion and a bunch of red radishes. Slice each of them finely. Dice a fresh green chilli and add.

Now add equal parts of white vinegar and water, a good pinch or two of salt and half a teaspoon of sugar. Stir to mix well.

Leave to sit for 5 or 10 minutes then drain and serve. This is even delicious with hot meals or over steamed rice.
