This is a great, quick onion salad that I often make to use up those half onions remaining from another dish. It retains the onion’s bite yet softens its intensity. It is such a perfect accompaniment to Indian curries too.
Would you believe that I first made this in 1998? It is also cross posted as part of the retro recipes on our sister site, Heat in The Kitchen.
Sweet Onion Salad with Coriander Spice
5 white or red onions, peeled and sliced very thinly
2 Tblspn coriander seed
salt and freshly ground black pepper
6 Tblspn extra virgin olive oil
Pour very hot – boiling water over the onions and let sit for 2 – 3 minutes only. This removes the ‘bite’ of the onions without removing the raw onion taste(sitting longer removes more of the onion’s bite).
Crush the coriander seeds roughly in a mortar and pestle.
Drain the onions very well. Mix the onions with the crushed coriander seeds, salt, black pepper and olive oil.
Cover and stand for 30 minutes.
Enjoy! What a great way to use up left over onions.
