This salad is a lot of fun, but a bit of work to shave the stalks. It is easier if you find large stalked Asparagus, but make sure it is not stringy.

Shaved Asparagus Salad
Remove the tips from the asparagus stalks and place in a bowl. Shave the raw asparagus stalks with a vegetable peeler. If the outer layer is tough, discard the first pass of the peeler. Add the shavings to the bowl with the tips. Dress with lemon vinaigrette and sea salt – it is easier if you mix it with your hands.
Pile onto a gorgeous serving plate and serve.

I finished my asparagus yesterday which I had steamed so I must now buy more to try this salad. It is all young and fresh just now, so the right time of the year to eat it.
