This is a salad to wake you up and enliven your senses. Fueled with chilli, then the heat is softened (a little) with herbs and crunchy ingredients, and then it is dressed with Asian ingredients. Better than coffee, you will be full of energy in no time! 😀😘

Spicy Crunchy Herby Salad with Asian Style Dressing
Take some bean sprouts – you can make your own if you wish. I used home sprouted mung and masoor dal (called whole red lentils in the West). Then finely grate some carrots and chop some celery sticks. Very finely chop some fresh chili to taste – you can whizz this in the spice blender if you prefer. Mix all of the ingredients, and then dress with a light soy sauce or tamari, sesame oil, a little lime juice and sweet soy sauce. If you don’t have any sweet soy, add a bit of jaggery or white sugar. Top with lots of chopped peanuts and chopped basil, mint and green coriander.
Of course, add more or less chilli to suit your taste buds and heat tolerance.
