This is a salad to wake you up and enliven your senses. Fuelled with chilli, then the heat is softened (a little) with herbs and crunchy ingredients, and then it is dressed with a stirring of Asian ingredients. Better than coffee, you will be full of energy in no time! 😀😘
Spicy Crunchy Herby Salad with Asian Style Dressing
Take some bean sprouts – you can make your own if you wish. I used home sprouted mung and masoor dal (called whole red lentils in the West).
Then finely grate some carrots and chop some celery sticks. Very finely chop some fresh chilli to taste, green or red – you can whizz this in the spice blender if you prefer. Mix all of the ingredients.
Dress with a dressing of light soy sauce or tamari, sesame oil, a little lime juice and some sweet soy sauce. Whisk them together with a fork and then toss with the salad. If you don’t have any sweet soy, a little jaggery or white sugar can be added to the dressing.
Top the salad with lots of chopped peanuts and chopped basil, mint and green coriander. Serve and enjoy!
Of course, add more or less chilli to suit your taste buds and heat tolerance.
