This morning’s salad, made in a matter of moments, colourful and divine, is a Carrot Salad from Morocco.

Moroccan Carrot Salad
Take some carrots and shred, grate or slice thinly. Toss with toasted cumin seeds, olive oil, lemon juice and cilantro. Add some raisins.
It is not a very Moroccan thing, but I like to add popped black mustard seeds too – they have an affinity for carrots.
Parsley and chives also make good additions to the salad.
