Moroccan Carrot Salad

Take some carrots and shred, grate or slice thinly. Toss with toasted cumin seeds, olive oil, lemon juice and cilantro. Add some raisins.

It is not a very Moroccan thing, but I like to add popped black mustard seeds too – they have an affinity for carrots.

Parsley and chives also make good additions to the salad.

  1. We make an almost identical salad in our house. Its our go to when unexpected guests arrive and end up staying for lunch/dinner because of the lovely colour. and because we always seem to have the ingredients in the house The only difference is we stir in some chickpeas too…because we are kind of obsessed with chickpeas, or so it seems..
