As we launch into Autumn, every sunny day is precious. While the sun shines, marinate some eggplant and toss it on the grill for a smoky lunch with some BBQ’d onions, hot lentils and a salad.
Marinated Eggplants – for the BBQ or Indoor Grill
Take a medium eggplant or two, depending on the number of people that you are cooking for. Slice or cut it into large thick cubes.
Place in a bowl and drizzle with good amounts of olive oil. Grate some lemon rind over the pieces, and squeeze a good amount of lemon juice onto the eggplant. Scatter with fresh rosemary needles, some thyme and/or marjoram. Alternatively, crush some home dried rosemary, thyme and/or marjoram over the eggplant pieces. Finely chop or mince garlic cloves and also scatter over the pieces. Allow to marinate for an hour, a day or up to 2 days.
Light your BBQ grill. When it is ready, place the pieces onto the grill and cook. Let the edges singe – the smokiness is attractive to eggplant.
Remove from the heat when cooked, and serve.
You can cook the eggplant on an indoor grill, or even bake in a moderate oven.
If you have a covered BBQ, you can leave the pieces in a heat proof dish with the marinade and cook that way.
The eggplant sucks up the flavours, especially with longer marination. Try other marinades as well – an Indian spicy rub is also very good.
