I have this meal that I make when in a hurry but need to eat . Or maybe too tired to cook. Perhaps it is Sunday night. It works every time. Made of rice and vegetables it is one of innumerable rice dishes that can form meals. This one is quick, all done in 20 – 25 minutes, and is cooked in the rice cooker. Moreover it is healthy and delicious.
Perfect 1-Pot Rice and Vegetables Dinner
Add 1 cup rice to the rice cooker with 1 cup water or according to your rice cooker directions. If you are using basmati rice, sona masori rice or other absorbent rice, add about 1/4 cup extra water.
Take three or more vegetables from the fridge and slice or chop them, depending on what they are. Layer them on top of the rice or in the steamer tray above the rice. Dribble the rice with a little ghee (optional), a little turmeric, a couple of ground spices you might have lying around (all optional). Throw in a dried chilli (optional). Turn the rice cooker on.
When it beeps, stir the vegetables into the rice. You can throw in chopped herbs (optional) or a little extra ghee. Close the lid and leave for 3 – 5 minutes, then serve. Add salt if needed, and sprinkle with a little podi spice mix (or use some Garam Masala). Add some Indian chutney or pickle on the side if you have some.
It is mightily delicious. Try it.
Use any vegetable combo that you like. Tomatoes are awesome. Today, it was fennel (sliced thinly), fresh young garlic (sliced thickly), sweet potato (small cubes) and cabbage (sliced). Another day it was cabbage, eggplant and grape tomatoes, and some chilli jam was stirred through the rice before cooking.
If you only have one vegetable in the fridge, that is ok, use that. I often use just tomatoes.
Cooked or canned Chickpeas and other cooked lentils can be added to the rice as well. A little mung dal can be cooked with the rice, but add extra water as well.
Sprouts can be added. If you want them to stay crisp and crunchy, stir them through at the end. Otherwise, add them to the rice or steamer tray.
Top with chopped herbs, green onions, baby spinach or fresh sprouts.
