Thai Lettuce Wraps

This is a a raw, Thai inspired lettuce wrapped dish, which is amazingly delicious, easy to make, and just as good as leftovers. The filling, made mainly of walnuts and mushrooms, is rather brown. Don’t let this put you off. It is wonderfully tasty.

These Thai Wraps are so simple to make,  and well worth experimenting with. We love the balance of flavours, adding lime juice as we ate.

Thai Lettuce Wraps

1 1/2 cups Walnuts
1/2 cup celery, diced
1/2 cup diced carrots
1/2 red capsicum, diced
1/2 – 1 zucchini, diced
1/2 – 1 cup mushrooms, chopped
1 tspn grated lime or lemon zest
1/2 cup fresh green coriander,minced
1/4 cup Spring Onions chopped (greens only)

1/4 cup raw honey
1/8 cup Shoyu or Tamari
½ tspn garlic, minced
1 tspn ginger, grated
1 Tblspn sesame seeds
1 Tblspn toasted Sesame Oil (use Asian rather than Indian sesame oil here. Indian is blander and used for any type of cooking. Asian is stronger in taste and used in smaller quantities. Organic is good if you can get it.)
1 tspn red pepper flakes or use some chilli powder or chilli paste to taste

1 head of Lettuce that is flexible enough to wrap. I used Iceberg for its wonderful juicy, crisp flavour and texture
Mung Bean sprouts
Carrot, grated
A small amount of Daikon radish or red radish, finely grated (optional)
2 limes or lemons
Roasted, unsalted peanuts, chopped

Gently pull apart lettuce leaves, wash and let dry on paper towel.

Next, prepare the sauce in a food processor by pulsing all the ingredients 3-4 times.

Then, add walnuts to the sauce in the processor and pulse 4-5 times until meat of walnut is the consistency of ground meat. Add the vegetables and pulse 5 or so times until the ingredients are incorporated but still has some texture.

Place 2-3 lettuce leaves on each plate, and place the filling in a bowl and the toppings in another bowl. Each person scoops 2-3 tablespoons of walnut filling mixture onto a leaf, garnishes it with sprouts and grated carrot etc, and squeezes some lime juice over.

Eat and enjoy such healthiness.
