Mr Well's Translucent Cucumber Salad

This salad is a simple variation on Amber’s Cucumber Salad, but is special enough to deserve it’s own place. It is simple but gorgeous, with the cucumber slices becoming almost translucent if you slice them thin enough. A perfect Summery day’s salad. Serve with some light brown bread for lunch on the terrace.

Mr Well’s Translucent Cucumber Salad

ingredients
cucumber
good white wine vinegar
cold pressed extra virgin olive oil
freshly ground or cracked black pepper
salt

method
Peel the cucumber and slice extremely thinly. Arrange in a circular pattern on a large dish, without making layers. Sprinkle with a little salt and leave for 30 minutes. Drain the liquid from the dish and pat dry. Sprinkle with the vinegar and drizzle with olive oil, and season with pepper. Leave 30 minutes before serving. The cucumber will be translucent and moist.
