Celery sort of misses out in the salad stakes. There are not so many salads that feature celery as its core ingredient. This salad changes that, it at least puts a stake in the Celery Salad map. Asian style in flavours with a little heat, it will be a classic at your place once you have tried it.
Spicy Celery Salad
5 stalks celery
1 Tblspn soy sauce or tamari
1 Tblspn toasted sesame oil
1 Tblspn rice vinegar
1 tspn caster sugar
1 tspn chilli oil or a little chilli paste, or 0.25 tspn chilli flakes
Slice the celery sticks on the diagonal. It will make 2.5 – 3 cups.
Place the dressing ingredients in a jar and shake will until the sugar is dissolved.
Dress the celery with the dressing and allow the salad to rest for 1 hour before serving.
It keeps in the fridge for about a week.
If you are using chilli oil or paste, sprinkle a few chilli flakes over the top as well.
