Fennel Salad with Orange Vinaigrette

Oh this is the easiest of salads. Often we just slice fennel with a mandolin and serve with olive oil, a little lemon perhaps, and some sea salt. This is an easy variation.

Fennel Salad with Orange Vinaigrette

Easy Fennel Salad with Orange Vinaigrette

This is such an easy salad. Slice a fennel bulb with a mandoline, and dress with an orange or orange vinaigrette. Garnish with fennel fronds if you have them. Delicious. Enjoy!

Make an orange vinaigrette by placing olive oil, white wine vinegar, mustard, a little orange zest and orange juice in a screw-top jar. Season with salt and pepper. Secure lid and shake to combine.  The vinaigrette is also wonderful with avocado or spinach. Replace the orange with lemon if desired. Or add a little honey if you are looking for a slightly sweeter vinaigrette.
