Sweet Potato Crisps

TV snacks are always needed, especially on those nights after long, hard days. The good news is, you can make your own crisps. We have begun making them from sweet potatoes. They are especially easy to make, and store well in airtight containers.

Sweet Potato Crisps

Wash and dry your sweet potato and slice thinly using a mandoline.

Soak the slices for 1 – 2 hours to remove some of the starch. Drain the slices and dry them well using tea towels or kitchen towels. Toss the dried slices in a bowl with sea salt and a drizzle of olive oil. Toss well until all slices are coated.

Place the slices in a single layer on dehydrator racks and dry at 52C for 8 – 12 hours until crisp and dry.
