Orange and Walnut Salad

It so happens that both oranges, fresh from the tree, and fresh, whole walnuts, are far more delicious than their shop-bought counterparts. More amazingly, oranges and walnuts go very well together. Pair them in a salad for a gorgeous luncheon or light supper salad, even in Winter.

Orange and Walnut Salad

Take an orange and peel, removing all the white pith. Slice thinly, saving any juice.

Lay the slices on a serving plate. Take some walnut shells, crack, and remove the walnut meat. Scatter over the orange slices.

Optionally add mint leaves, coriander leaves, and chopped spring onion (scallion) tops.

Drizzle with some Walnut Oil, a little lemon juice and the saved Orange juice. A little salt and black pepper too. Scatter with pomegranate seeds if you have them.

Serve and enjoy!
