This Umbrian Sauce is an approximation of an old recipe for a sauce which is said to cure many maladies, using modern day ingredients. It keeps very well in the fridge, so if you are feeling under the weather, make a batch and drizzle it on everything. I do love it on a green salad. Since moving into this house with its excellent back yard, we are never without greens suitable for salads.
It is herby and mustardy. You can imagine why it has a reputation of being a cure-all.
Umbrian Sauce for a Cure | Salsa di Curata | Herby Mustard Sauce or Dressing
100ml Dijon mustard
300ml extra virgin olive oil
1.5 tspn balsamic vinegar
1 small clove garlic
1 tspn freshly ground black pepper
0.25 tspn salt or to taste
2 tspns dried oregano
50g fresh basil leaves
25g fresh marjoram leaves
50g flat parsley leaves
2 tspns capers, rinse if salt preserved
juice 1 large lemon
Put all of the ingredients in the blender or food processor. Process until smooth.
Taste and adjust lemon, salt, oil, sugar and basil if required. The sauce should have the consistency of thick cream, thinner for a dressing
Serve as a sauce with vegetables, or a dressing. It is delicious in sandwiches.
