Today’s recipe is another Green Tomato dish to add to our collection. Green tomatoes are generally available from Late Spring or Early Summer into Autumn, if you can find a green grocer who stocks them. This dish is a quick, spicy stir fry using just the tomatoes with onions and spices.
Green Tomato and Onion Subzi | Green Tomato Fry
3 – 4 green tomatoes, chopped into large pieces, 2cm – 2.5 cm
2 Tblspn ghee or Indian Sesame Oil
1 tspn brown mustard seeds
2 Indian dried red chillies
1 tspn cumin seeds
8 – 10 curry leaves
1 onion, chopped
1 clove garlic, chopped (optional)
0.5 tspn turmeric powder
1 tspn chilli powder, or to taste
1 tspn coriander powder
1 tspn cumin powder
0.5 tspn amchur powder
Heat the ghee or oil in a kadhai or pan, and add the mustard seeds. Allow them to pop and then add the cumin seeds and dried chillies. After a moment add the curry leaves and allow to splutter.
Now add the onion and garlic and saute until the onion is softened. Add the tomatoes and the remaining spices and stir to mix well. Keep stirring the tomatoes and onions so that they don’t stick, and after a little add a splash of water to prevent sticking. Stir well and keep stirring until the tomatoes are tender but still crunchy.
Place in a serving bowl and top with coriander leaves. Serve with rice or roti.
