Tomato Salad with Ginger and Lime
Combine finely grated ginger with tomato wedges (or halved cherry tomatoes), chopped lettuce (cos lettuce is good), spring onions (scallions), extra virgin olive oil, sea salt and black pepper, and a bit of lime juice. Sprinkle with Pomegranate kernels. Pile onto great bread, or into pita, or serve with flatbread. Divine.
