Summery Watermelon-Lime-Ginger Soda with Spices

Such a Summery drink, gorgeous for sunny days, eating snacks. laughing and giggling while you sit on the lawn under the shade of a large tree or umbrella. Tangy and gingery, it is also cooling and will lift the spirits of anyone.

We even made this in Autumn, with the last of the watermelons for the season, and the weather is sunny and lovely. A last hurrah to Summer and watermelon.

Summery Watermelon-Lime-Ginger Soda with Spices

Cube some watermelon, about 2 – 3 cups, and toss into a blender with the juice of a lime (or half a lime if it is a large one), 1.5 – 2 Tblspn peeled, chopped ginger and a pinch sea salt. Pulse the blender until the watermelon begins to blend easily, then blend until it is pureed. Add about a cup of ice cubes, and blend again (check your blender instructions for how to blend ice), until a smooth puree is formed.

Into each glass, pour half a glass of watermelon blend and top up with soda water. Sprinkle chaat masala on top and serve with a spoon to stir the masala into the drink.

recipe notes and alternatives
Chaat Masala can be made at home, or purchased from your Indian grocery.

Adjust your ginger level to personal taste. I add more as I like it gingery.

Add the masala before adding soda, to avoid having to stir it in.

The puree can be stored in the fridge until ready to use, so make a large jugful for steamy hot days.
