Apple and Celery Salad with Creamy Miso-Seed Dressing

A wonderful Winter salad is apple and celery with walnuts – seasonal, healthy, crunchy and delicious. This easy salad has a blended dressing made with seeds (sunflower or pepitas – pumpkin seeds), miso and umeboshi plums.

Apple and Celery Salad with Creamy Miso-Seed Dressing

ingredients
2 – 3 crunchy apples, chopped into 1 cm pieces
3 – 4 stalks celery, diced into 1cm pieces
1 cup walnuts, toasted
2 Tblspn chopped chives or other soft herbs
1 lemon, juice
red onion, sliced thinly, for garnish (optional)

dressing
1 cup sunflower seeds or pepita (pumpkin seeds)
0.25 medium red onion
0.5 lemon
1 umaboshi plum, or small amount of tamarind paste
1 tspn white miso (shiro)
0.5 – 0.75 cup water

method
Blend the dressing ingredients to a thick but flowing dressing, adding more water as needed.

Mix the chopped celery and apple and lemon juice to coat. Add the toasted walnuts and half the chives. Toss liberally with the dressing. Garnish with the remaining chives and red onion slices. Serve and enjoy.

recipe notes and alternatives
Nuts (eg cashews, almonds, pistachios) or tahini (use less) can be used instead of seeds.
