Flat Bean Salad with Blue Cheese and Walnut Crumbs

Flat beans don’t feature often at our place, but this recipe is worth including them in the weekly shopping. Quick cooked beans are tossed with toasted walnuts and tangy blue cheese. A great Winter salad.

A crumb is made with the walnuts and fresh breadcrumbs, and it complements the beans so very well. The blue cheese adds such a nice tang.

Flat Bean Salad with Blue Cheese and Walbut Crumb

Italian Flat Beans with Blue Cheese and Walnut Crumbs

ingredients
2 Tblspns olive oil
30g walnut pieces
35g fresh breadcrumbs
200g flat beans, halved
1 Tblspn lemon juice
100g blue cheese, crumbled

method
Heat the oil in a large saute pan over medium to high heat, and add the walnuts and breadcrumbs. Toast them, tossing often, until crisp.

Meanwhile, cook the beans in salted water for 2 – 3 minutes until bright green and crisp. Drain well.

Place the beans on a serving platter, drizzle with the lemon juice and sprinkle with the blue cheese and the walnut crumbs. Serve and enjoy!
