Baked Feta with Mediterranean Flavours

Baked Feta is a perfect mezza dish, served with crackers or flatbread. Flavoursome, soft, mouth watering, the baked feta is aromatic and elicits sounds of approval from your friends at your shared table. It is the sort of dish that you can make at the last minute – your friends arrive unexpectedly at meal time, as they do.

Or it is a great snack, mid afternoon, with a pot of mint tea. And it goes really well on Summery days when the BBQ is lit and people are milling around, nibbling, while the salads are made and the vegetable kebabs are cooking. We have also had it on a Winter’s day as we sit around the fire, reading, writing and chatting. Best of all, it is a perfect Summer Holidays dish, when no-one wants to cook much at all.

This recipe is a mish-mash of Italian and Greek. Definitely Mediterranean.

Baked Feta with Mediterranean Flavours

Baked Feta with Tomatoes and Red Capsicum

ingredients
1 block feta, about 200 – 250 g
1 medium tomato, chopped finely, or a dozen or so cherry tomatoes, halved or quartered (depending on the size)
1 small red or green capsicum, chopped finely
0.5 red or white onion, chopped finely
1 tspn dried oregano or 2.5 tspn fresh oregano leaves
o.5 tspn dried mint
1 Tblspn chopped parsley
6 – 8 pitted olives, chopped
1 or 2 thin slices lemon, halved
olive oil
black pepper
dried chilli flakes

method
Preheat the oven to 200C.

Place a little olive oil in a small ceramic dish, just big enough to hold the feta. Place the feta in the dish and drizzle a little of the oil over it.

Sprinkle half of the herbs over the feta, then place the diced onion, tomato and capsicums on top. Add the rest of the herbs and drizzle with more olive oil.

Surround the feta with chopped olives and lemon slices.

Sprinkle with black pepper and dried chilli flakes.

Place the feta in the oven, uncovered, and bake until the sides of the feta begin to caramelise, about 20 – 30 mins.

Serve and enjoy!

recipe notes and alternatives
Add a couple of cloves of chopped garlic if desired.

The olives can be omitted.

Variations

In this variation, the feta was placed on a layer of cooked chickpeas and caramelised diced swede. Finely chopped greens were added to the ingredients above. Trust me, there is a block of feta under the tomatoes, olives, onions! It is about to go into the oven.
