There is nothing better than balmy weather, and pineapples are in the markets! So we bring a slightly tropical feel to the table today with a special salad of cucumbers and pineapple.
Kachumber is a Hindi word for chopped into small pieces, and is sometimes also called a Parsi Salad. It has a pepper and lemon or lime dressing that can often include fresh chilli peppers or chilli powder. The dressing is unique to this salad, as it does not contain any oil and gives a peppery tang to the salad.

Cucumber and Pineapple Kachumber
1 cucumber, diced
1.5 cups pineapple, diced
1 tomato, diced
2 Tblspn chopped mint leaves
juice of 1/2 – 1 lemon or lime, to taste
2 tspn sugar
0.25 tspn chilli powder
0.25 tspn chaat masala or amchoor powder
pinch ground black pepper
sea salt to taste
Mix the diced vegetables together in a bowl with the mint leaves.
Mix the remaining ingredients in a small bowl and stir until the sugar dissolves. Pour over the salad, mix and serve. Start with juice half lime or lemon, and add more if required. You are after a reasonably tangy taste.
