Our weather this year has seen bees and koalas dying in the heat, and tiny fruit forming drop from the trees. It has been a wicked Summer. For the first time ever I am without coriander leaves as they have burnt to a crisp.
In the heat of the Summer one of our favourite coolers is a pineapple based drink with citrus and strawberries, finished off with cooling coconut milk. I like it in the evenings with a touch of alcohol too. We rarely drink alcohol, it is just our preference, but this is one drink that will tempt me on a 40C+ day.
The Ultimate Cooler – Pineapple Juice with Strawberries, Coconut and Lime
1 pineapple, peeled
0.5 long cucumber
1 cup coconut milk
0.5 – 1 lime
1 small orange, peeled
2 tspn maple syrup or palm sugar
extra strawberries and basil or mint leaves to garnish
Juice the pineapple with the cucumber, lime, orange and strawberries. Mix in the coconut milk and maple syrup. Add 1 cup water if it is too thick. Cool in the refrigerator.
Served garnished with chopped strawberries and basil leaves.

Also nice with gin or your favourite tropical alcohol.
You can make this drink from purchased pineapple juice. Use 3 cups of pineapple juice, the juice of a lime and an orange. Float the strawberries and herbs in the juice.
A pinch of salt in the juice will enliven the flavours without impacting the taste.
