Journey of the Heart Chai

basic recipe
For the basic chai, simmer (in a cup or two of water) black tea, slices of fresh ginger, bruised cardamom pods, a cinnamon stick and 3 or 4 cloves. After they simmer for 5 – 10 minutes, add some jaggery or brown sugar and 1 – 2 cups milk. Simmer again for 5 mins before enjoying.

To the spices, you can also add (depending on your mood, the weather, the time of year and the basic state of the world):

Fresh mint
dried ginger (small amounts as it is very intense)
fennel seeds or fronds
fenugreek seeds (just a few)
turmeric root or powder (just a little)
liquorice root
cloves
hawthorn
dandelion root
black pepper (begin with small amounts)
cumin seed
celery seed
fresh parsley
parsley seed
lemon grass
kaffir lime leaves
saffron
tulsi leaves
