Danish Salted Cucumber Salad

The Danish love to salt their cucumbers, removing the water inherent in this summery vegetable and infusing the flesh with salt and lemon juice. It is a delightful dish, and interestingly it is perfectly suited to the extreme heat of Australian Summers as well as the cool Summers of those far Northern regions.

Danish Salted Cucumber Salad

Salted Cucumber Salad

ingredients
450g cucumbers
1 Tblspn sea salt
1 Tblspn fresh lemon juice
1 Tblspn fresh dill, chopped
1 Tblspn coriander leaves,chopped

method
Split the cucumbers lengthwise, and remove the seeds by scraping a spoon along the length of the cucumber. Slice on the diagonal in half cm slices.

Toss the cucumber slices with the salt and lemon. Set aside for 20 mins. Drain and discard the liquid that has formed in the bowl. Taste the cucumbers and adjust the salt and lemon, if necessary.

Toss with the dill and coriander leaves, and serve.
