Today I am bringing five of my favourite dishes of Winter. I do hope you enjoy them.
In my mind, as good as hummus, Babaganoush is spectacular when layered with toppings. There are so many you can choose from.
When comfort food is needed in Winter, this is the ultimate. You can even braise some leeks and toss them through the mash.
This beautiful Tuscan dish is a no-fuss, easy cook dish – it takes time for the soaking of the beans and a 2-hour baking time, but there is little to do. The result is a bowl of creamy beans flavoured with herbs. Use lima (butter) beans, or cannelini beans. Black eyed beans can also be used.
