Couscous and Chickpea Pilaf with Pistachios

Chickpeas go with just about everything, they are so versatile. I love them with pasta and with freekeh. Tonight they are paired with couscous for a beautiful pilaf scattered with pistachios. The nuts add colour and also beautiful textural contrast. I love using pistachios but pinenuts are also superb.

The best thing about this pilaf is it is made in 5 mins if you use pre-cooked or tinned chickpeas.

Couscous and Chickpea Pilaf with Pistachios

Couscous and Chickpea Pilaf with Pistachios

ingredients for 3 or 4 serves
1 cup couscous
1.5 cups boiling water
1 tspn light miso
240g chickpeas (tinned for freshly cooked)
2 Tblspn chopped parsley
sea salt and black pepper
0.33 cups pistachio nuts or use pine nuts (toasted)

method
Quickly mix the boiling water with the miso and when dissolved, pour over the couscous. Allow to sit for about 10 mins until the couscous has swollen and absorbed all of the water.

Add the chickpeas, parsley and seasoning and stir through. Transfer to a serving dish and sprinkle with the pistachios.

Serve and enjoy.
