This is a versatile Summer salad. The base can be a grain, dried bean, lentil or even tiny pasta. Indeed you can mix them as well. Use couscous, barley, freekeh, burghul, Israeli couscous, small pasta, horse gram, quinoa, rice, puy lentils, matki beans, butter beans or haricot beans. This is definitely a salad that helps you clean out your pantry – use any grain, lentil or bean that you have available. Today I am using barley mixed with a little tiny pasta.
Just a note about the salad dressing. It uses a curry powder. Either use a good quality one or make your own. My Mother used to make a Curried Rice Salad, and we loved it. This is my take on that salad. Today I have used barley as a base, with a little tiny tubular pasta. It is great alongside an Halloumi Burger and steamed sweetcorn!
Summery Grain or Lentil Salad
3 cups cooked and still warm couscous, barley, freekeh, burghul, Israeli couscous, small pasta, horse gram, puy lentils, matki beans, quinoa, rice, or other grain, lentil or tiny pasta
1-2 tablespoons olive oil
sea salt, to taste
1 bunch spring onions (shallots), sliced finely
1 red capsicum, seeds and membranes discarded, sliced finely
0.5 cup raisins or currants
0.5 cup cooked chickpeas (tinned is Ok), rinsed and drained, optional
handful of coriander leaves and stems, chopped
small handful mint leaves, chopped
While the base grain or lentil is still warm, drizzle with the olive oil and sea salt to taste. Mix well.
Place in a large bowl and after it cools, mix with the spring onions, capsicum, raisins or currents and chickpeas (if using).
Mix a little salt, the spices and lemon juice. Whisk in the olive oil, then pour the dressing over the salad and mix gently. Place on a serving platter and scatter chopped coriander and mint over the top.
