I have been in love with pears in more savoury applications since last century’s fascination with putting them in salads, soups and baked dishes. Today we bring pears and apples together in a salad with a creamy yoghurt and cucumber dressing. A crunchy salad that will brighten anybody’s day.
Pear and Apple Salad with Cucumber Dressing
2 large pears, bartlett or bosc, or 3 smaller ones, cut into wedges or cubes
2 granny smith apples, cut into wedges or cubes
good squeeze lemon or lime juice
0.5 Lebanese cucumber (the shorter variety of cucumber), peeled and grated finely
4 Tblspn Greek or Desi yoghurt
0.75 tspn cumin powder
1 tspn dijon mustard
0.5 tspn palm sugar
0.25 tspn turmeric powder
0.25 tspn Indian chilli powder (or to taste)
coriander leaves, to garnish (optional)
Toss the pear and apple with the lemon or lime juice and set aside.
Squeeze the water out of the grated cucumber and mix with the yoghurt, turmeric, cumin, mustard, sugar, chilli powder and a little sea salt.
Pour over the apple and pear slices and toss to coat the slices. Taste and adjust seasoning.
Serve immediately, sprinkled with a little extra cumin and chilli, and garnish
