Kachumber | Chuchumber

Kachumber is a Hindi word for chopped into small pieces. It can mean any Indian salad made with a few salad vegetables that have been finely sliced or chopped and served with a wedge of lemon. Here we have the most commonly made kachumber – tomatoes, onions, cucumbers and herbs. The dressing is always lemon or lime juice and black pepper, although vinegar can be added in the Parsi version.

I have other Kachumber recipes here, but this one is simple. Quick and simple. I thought that I would include it because often that is what we want and need. It is as delicious as ever. I hope you enjoy it.

I’ve made Kachumbers using the chopping blade of a food processor, by grating some of the ingredients and by chopping by hand. Use which ever method suits you on the day.

Radish and Cucumber Kachumber

Kachumber, the chopped salad of India, comes in many varieties. Usually the salad is chopped finely but today I made a colourful kachumber with wedges of cucumber and red radish. It is fresh and lively, a perfect salad for Summer and into Autumn while the weather is still warm. Kachumber is the perfect, no fuss accompaniment to any Indian meal.

Beetroot, Radish and Carrot Kachumber | Beetroot Salad

We had a focus on Indian Salads last Summer, mainly varieties of Kachumber and Kosumalli/Koshambari. As the weather slipped into cooler parts of Autumn, I found myself wondering if thes were the last ones we would make until the warm weather arrives once more. Perhaps not, I thought, as I do love salads in Winter too, but they become a little heavier than the Summer versions. More lentils, grains and Winter vegetables.

It is Summer again, so time to bring you this particular salad. It is such a delightful salad, healthy and quick to make if you use a food processor. The dressing is the usual Kachumber dressing of lime juice and black pepper.

Although I use raw vegetables, but many in India like them cooked in some way. You can either saute them lightly in ghee or Indian sesame oil, or steam them just a little if that is your preference.

Carrot and Cashew Salad | Carrot Kachumber

We try to keep up our Salad consumption all year. It is easy to forget about salads in cold weather, moving instead to soups and broths, roasted and baked dishes and hot snacks. But salads bring a freshness into the diet, lifting the day with its flavours, and complimenting the hotter dishes. We will eat them as a snack or a course before the main meal. In Summer, naturally they are cooling and refreshing.

This one is special – an Indian salad of carrot, capsicum and cashews and can be made any time of the year. It is  dressed with yoghurt and tempered black mustard seeds.

There is nothing better than balmy weather, and pineapples are in the markets! So we bring a slightly tropical feel to the table today with a special salad of cucumbers and pineapple.

Apple and Yoghurt Salad with Grapes | Seb Kachumber

This salad is the type of dish that is usually an accompaniment to a meal, and can be served that way or eaten as dessert. It is easy to make and I often make it for “bring a plate” events. It is wonderful garnished with pomegranate seeds and pistachio slivers. If you don’t have pomegranate seeds, soft dried cranberries or barberries are also very good, or drizzle with a little pomegranate molasses. Add a little sugar if you are serving it for dessert.

Mooli Kachumber | Daikon Radish, Carrot and Coconut Salad

Kachumbers are the freshest of salads, crispy and crunchy, in the Indian cuisine. They dispel the myth that Indian does not use fresh, raw vegetables or include salads. Kachumbers are very easy to make, although some can take a little chopping. With a good food processor, the shredding or chopping is made even easier and quicker.

This salad is daikon radish, carrot and coconut – a fresh and lively taste for late Autumn and into Winter in our part of the world. However, daikon and carrots are available year round, so the vivid salad can grace your Summer table too. Yamuna Devi, in her book Lord Krishna’s Kitchen, has a number of these type of salads in the Little Salads chapter.

Kachumber | Chuchumber | A Tangy, Spicy Salad from India

Such a simple salad, yet such a huge explosion of flavour.

Oh how the amazing spicy sweet tangy sour tastes of Indian food bring happiness as their flavours burst in the mouth. Ashoka brand mixed pickles had me almost giggling last week as I almost ate them by the spoonful at the local Indian cafe.

I have been chatting about Chat Masala this week with friends — it is a spice mix that embodies spicy sweet tangy and sour. It is sprinkled on raw (and sometimes cooked) fruit and vegetables — and chickpeas — for that burst of amazing flavour. Try it on grilled sweet corn!

This version of the Kachumber salad captures all of that. Such a simple salad, yet such a huge explosion of flavour.
