Australian Toasties | Australian Toasted Sandwiches

Some countries (like India) do toasted sandwiches really really well. It is a serious business. And you’ve gotta love a country that spends as much time preparing a toasted sandwich filling as they do cooking any other dish.

In Australia, toasted sandwiches are those food items that need to be instant. They are instant snacks or a Winter’s night supper in front of the television. They are late night snacks or work place lunches. They pair well with a large bowl of Tomato Soup.

By the way, everyone I know has a different understanding about the difference between a toasted sandwich, jaffle, toastie and grilled sandwich. Some differentiate between a toastie and a toasted sandwich. A toastie they say, has sealed edges and is cut in half (with the cut edge also sealed) and a toasted sandwich is neither sealed nor cut. Toasties are called jaffles in a few areas of Australia (e.g. Sydney), but not many. I connect jaffles with the round toasting irons that went over a wood fire or a gas stove. You can still get them in camping stores. A grilled sandwich is a US term for toasted sandwiches.

But I want to be clear that I use the term toastie to mean a sandwich that has been toasted and may or may not have sealed edges and may or may not be cut in half. Either way.

In Australia, the most common filling for toasties is cheese – cheese and tomato, for example. There are examples of non-vegetarian items that are added (but we don’t cover them here).

Baked beans is another common filling (using tinned baked beans), perfect for a cold Winter’s day.  We present a few more options for you.

Spinach, Ricotta and Mozzarella Toasted Sandwiches

The day started off at -2C, rather cold, and has edged its way up to 11C. It is the sort of day to eat toasted sandwiches and bowls of soup. To curl up with a rug in the warmth of the heating, instead of at your desk to get the day’s money-earning work done. To prioritise catching up on podcasts rather than racing around doing errands.

We always (mostly) try to get more vegetables into our day, and toasted sandwiches can be just the vehicle. This is our way to pack toasted sandwiches with spinach or other greens and load it with cheesy goodness.

Indian Vegetable Toasties

One of the easy ways of including more veg in your diet is to make delicious toasties. In this recipe we make a bechamel sauce, mix in some spices and finely chopped vegetables, and make toasties with the mix either on the tawa or in a toasted sandwich maker. We like to make toasties for Sunday night dinner when we have had a hectic weekend and just want to relax without too much effort. This is a habit born from childhood when we would use the leftovers from our large Sunday lunches to make toasties on Sunday nights. They go well on a Saturday night in front of the football on TV too.

By the way, when I was writing this post I had a vigorous conversation about the difference between a jaffle, toastie, grilled sandwich and toasted sandwich. Some differentiate between a toastie and a toasted sandwich. A toastie has sealed edges and is cut in half (see my pic) and a toasted sandwich is neither sealed nor cut. Toasties are called jaffles in some parts of Australia, but not many. To me, a true jaffle is made in a round, closed sandwich-maker that is held over a flame, either a gas flame or an open fire. A grilled sandwich is a term from the US. Glad we got that all sorted.

Indian French Toast (Eggless) with Baked Strawberries | Egg Free

Summer time and strawberries. The scent of fresh strawberries is intoxicating – have you noticed?  We tend to eat them fresh, make Strawberry Icecream, we might bake them, they might go into a salad, or we blitz them into a lassi or frappe or smoothie. Occasionally we make strawberry jam.

But today we are having a special breakfast, making an Indian version of French Toast (no eggs involved), that is topped with slightly baked strawberries. The toast is encased in a sweet, cinnamon flavoured, chickpea flour batter, and is topped with baked strawberries. You can make the same French Toast and serve with strawberry jam – that is pretty good too.

Sweetcorn and Spinach Bhaji | Corn and Spinach Stirfry

Bhurji are pan-fried Indian vegetable dishes that are not quite dry, but not really wet dishes. They are dry yet damp dishes. The best known Bhurji is made with eggs and is somewhat like scrambled eggs. But we don’t cook with eggs, so the Bhurji that we make are pure vegetarian. They are similar to the Thoran of Kerala and Poriyal of Tamil Nadu. Bhurji is an Andhra dish.

This one is made with greens and sweetcorn, with spices. Spinach and Sweetcorn is a loved combination in India – the sweetness of the corn playing nicely with the spices against the slight bitterness of the spinach. This dish can be served as it is, a perfect side dish to a meal. Or serve it with cumin rice or some roti for a snack. It is also very very good as a filling for Toasties – Indian style toasted sandwiches. Use it as a filling with some cheese and perhaps sliced tomato.

Tomato and Basil Salad with Grilled Cheese Croutons

After a seasonal slow start to the tomato season this past Summer (poor setting of flowers all over Adelaide), as I write this in late, late Summer, they are ripening in abundance. How special that is – teeny little cherry tomatoes and little egg shaped ones, juiced, cooked, made into salads. Yum.

This salad, another from Bittman as I journey through his 101 salads, is a wonder – a toasted sandwich made into croutons, then mixed with the classic tomato and basil salad. How good is that! Combining 3 loves – basil, tomatoes and cheese toasties. I have added some green tomatoes to the salad, as I love their tang and use them whenever I can.

Indian Toasties | Paneer Toast

Bread doesn’t actually see the light of day very much in this household. It makes an occasional appearance, for guests, or for some recipe we are making. This week, as we had bread left over from that occasional appearance, we turned to Indian Toasties. This time, it is Paneer Toast.

Indian Toasties | Stuffed Sandwiches with Potato and Peas

Sandwiches are serious business in India as snacks and street foods.

You have to love a country that is serious about its sandwiches. Italy with its open sandwich type bruschettas, laden with seasonal ingredients. France with their bountiful baguettes, and India with its spicy mixtures stuffed between layers of bread and often coated with chickpea batter before pan toasting or frying.
