Ottolenghi has a great steamed eggplant recipe in Plenty More, rather like the Thai one that I posted here but just different enough to try it out.
Don’t you just love the silky texture of steamed eggplant – so different to its grilled counterpart?
Steaming maintains some of the aubergine flesh’s texture, which doesn’t happen if you cook it in any other way. It gives this dish a particular substantial quality, making it suitable to serve with just plain rice or fried tofu. It can also be used as a condiment or side dish.

Eggplant, the versatile King of Vegetables.
Such stunning weather this Spring, a little breezy, not too hot, not too cold. Everything is green, roses and other Spring flowers abound. The air is heavy with scents of roses and blossoms. The Jacarandas are flowering so prolifically.
And so our mind turns to Aubergines and yoghurt. A quick dish for lunch or side dish for dinner; it is very easy.

Another delicious recipe from Kerala.
There is something amazing about aubergine. Not only their colours and shininess, their taste varies from dish to dish. This recipe is from Kerala, a coastal Western state of India, where coconuts and bananas abound. Kerala is an amazing state, cleaner than many others with a very high literacy rate, and the only communist state in India. It is an easy state to be in, to visit and stay in, and the food is as good as anywhere. Several of my favourite Indian dishes come from Kerala.
Aubergines cooked in Coconut has a beautiful and flavoursome base of onions, garlic, ginger & spices, which is turned into a sauce with coconut milk. The sautéed aubergines soak up the sauce and the thickened gravy coats the pieces.

An Indian eggplant dish with a wonderful smoky flavour.
There are so many way to cook eggplants – it is such a versatile vegetable. Although it can definitely stand on its own (eg steamed eggplant dishes), it often prefers to be a part of a larger dish than stand on its own.
This recipe is an Indian dish where the eggplant is grilled until cooked through, and the flesh is mixed with spices. Many cuisines have recipes that treat the eggplant in similar ways but vary the ingredients. Baba Ganoush is one example.
Bharta are North Indian (Punjabi) dishes where the main ingredient is roasted and then pureed with spices. The flavours are intensified by the roasting and the resulting dish is spicy and tangy. Baingan Bharta is so popular, though, versions exist in several states of India.
