Buttery Eggplant Dal | Slow Cooker Recipe | Or cook on the Stove

Eggplant/Brinjal in a makhani style sauce – the only thing better is cooking it in a slow cooker. Delicious!

Sometimes you want an easy lunch or dinner. I have the answer. A slow cooker recipe with Eggplant, lentils and a buttery tomato sauce. Cook rice, and your meal is complete.

This is a sauce reminiscent of Dal Makhani. It is delicious with the addition of eggplant which cooks to the softest most luxurious eggplant that you’ve ever experienced. I have used urad dal and channa dal in this dish, but they are optional really, and you can make it without lentils. Simply reduce the amount of liquid that you are adding.

We make two versions of Brinjal Fry – one that is sauteed, and this one which is deep fried. Both are incredible, even tho they are easy, no fuss recipes.

Brinjal Fry | Kathirikai Varuval | Sautéed Eggplant with Spices

I was so blessed this week with vegetables from all directions….

My dear Indian Grocer ladies who greet me with hugs and discuss with me libraries, temples, chanting and food, who are passionate about Indian food, who are South Indians through and through even though some are from Malaysia, whom I love a lot, showered me with the most gorgeous eggplants, swearing they were so tender. Telling me to saute them only. Guaranteeing they would make a most marvelous dish. They were right. Of course.

Baingan Ka Bharta | Punjabi Smoky Eggplant Curry

An Indian eggplant dish with a wonderful smoky flavour.

There are so many way to cook eggplants – it is such a versatile vegetable. Although it can definitely stand on its own (eg steamed eggplant dishes), it often prefers to be a part of a larger dish than stand on its own.

This recipe is an Indian dish where the eggplant is grilled until cooked through, and the flesh is mixed with spices. Many cuisines have recipes that treat the eggplant in similar ways but vary the ingredients. Baba Ganoush is one example.

Bharta are North Indian (Punjabi) dishes where the main ingredient is roasted and then pureed with spices. The flavours are intensified by the roasting and the resulting dish is spicy and tangy. Baingan Bharta is so popular, though, versions exist in several states of India.
