A Quick, Simple Cheese and Greens Salad

This is a perfect evening salad, reminiscent of a cheese and greens plate – so much so that you will find yourself wanting to eat it with crackers! It is simple and quick, yet utterly delicious.

I don’t often advise buying bags of mixed lettuce leaves but sometimes it is the easiest and cheapest way to bring a salad together. Here I use mesclun, but any mix will work. If you have some watercress leaves, radicchio or Belgian Endive, add some of those too.

Top with toasted nuts or seeds. Walnuts are great – I generally keep a bowl of two of unshelled walnuts in the kitchen just to add to dishes as needed. But other nuts will work easily as well – pistachios, pecans, hazelnuts, for example. Or sunflower seeds, pepitas or other seeds.

Then drizzle with just a little walnut or hazelnut oil with even less lemon juice. Voila! A salad.

Gorgonzola and White Bean Salad with Chickpeas

For a huge amount of time, gorgonzola was not available in Australia. It was a source of huge frustration for any foodie, particularly those who love cheeses. But over the years, the restrictions have been relaxed and gorgonzola now appears even on supermarket shelves.

Need I say that we love this cheese? Here is another salad that uses it. It is one of our simple salads and combines the cheese with some tomatoes and Chickpeas and/or White Beans. I like to use cannellini or haricot beans. If you can’t get gorgonzola, there are more cost effective Australian Blue Cheeses that are also divine.

Cabbage or Lettuce Salad with Swiss Cheese and Rye, and a Russian Dressing

Simple salads are still coming – a few more yet – we are nearly at the end of our 101 Salads project. Simple salads can seem at first glance of the recipe to be incomplete, but put them together and the simplicity leaves the vegetables to shine gloriously. Whether it is tomato or Brussels Sprouts, or lettuce, or avocado, or whatever, simple salads remind us that it is Ok to leave ingredients alone, allow them their own space. Elizabeth David was a great advocate of this approach. Ottolenghi, conversely, breaks all the rules of simplicity.

This salad is shredded cabbage (Napa or Wombok) or some lettuce with some nutty Swiss cheese (I love Ementhal) and some rye bread croutons. Dress it with a dressing with a touch of heat. Nice.

Tomato and Basil Salad with Grilled Cheese Croutons

After a seasonal slow start to the tomato season this past Summer (poor setting of flowers all over Adelaide), as I write this in late, late Summer, they are ripening in abundance. How special that is – teeny little cherry tomatoes and little egg shaped ones, juiced, cooked, made into salads. Yum.

This salad, another from Bittman as I journey through his 101 salads, is a wonder – a toasted sandwich made into croutons, then mixed with the classic tomato and basil salad. How good is that! Combining 3 loves – basil, tomatoes and cheese toasties. I have added some green tomatoes to the salad, as I love their tang and use them whenever I can.

Beetroot and Goat Cheese Salad with Rocket

We are back to beetroot again – and home grown beetroot is simply the best. As soon as you begin to work with it, that earthy beetroot scent invades the kitchen. Raw beetroot, not often used, is not only good for us (lots of roughage), its texture and taste is perfect for salads. Crunchy! Plus beetroot salads add such a colourful element to the dinner table.

Fresh or Dried Figs Salad with Blue Cheese

Oh Figs! How much I love Autumn because of the produce (and the colours), and figs feature so strongly in that love. But what to do when the short Fig season ends?

Middle Eastern shops often stock dried figs, lovely whole round beauties that are different to the dried figs that you might find in the supermarket. They are lovely to snack on whole, but also, when they are soaked, they taste so much like figs, with a familiar internal texture.

This salad is wonderful with fresh figs, do try it. But today we made it with soaked, dried figs. It is different, but the sweet figs with the blue cheese is so lovely. And it is great to be able to make this salad outside of fig season.

Mushroom, Spinach and Blue Cheese Salad

For a change, this is a cooked salad. Mushrooms are sautéed with shallots, and then spinach is wilted in their heat. Blue cheese is added and it softens and melts, forming a dressing for the salad. It is an incredibly delicious salad that can be eaten warm or at room temperature. Use a good quality blue cheese for the best results.

This is another salad from the Bittman Salads, and I am on a journey to make all of the vegetarian ones (and adapt as many of the non-vegetarian ones that I can). Focusing on salads in the warmer weather months has changed my diet considerably, and for the better. I encourage you to make a salad per day – often it can form the basis for your packed lunch (sometimes your whole lunch), or have it as a salad course at dinner time. In this salad, we were fortunate enough to pick the spinach from the garden.

Green Salad with Raspberries, Walnuts and Blue Cheese

I’ve been longing for a green salad. Having made (and eaten) too many ANZAC Biscuits, we needed something to counterbalance that wonderful sweetness of the biscuits. This salad did it. It combines greens from the garden (use what you have at hand) with some soft raspberries, crunchy crushed walnuts and tangy blue cheese.

This is another wonderful salad from Bittman. I am over half way through the journey of making his 101 salads (at least, the vegetarian ones). Each one has been wonderful and this one is too.

Mozzarella Salad with Crispy Tomato Crumbs

Fresh Mozzarella balls, tomatoes, basil, olive oil and pomegranate are always a perfect combination.

There is a great salad that I make which consists of torn mozzarella balls, olive oil, pomegranate molasses, tomatoes, cucumber, pomegranate seeds when I can get them. It is easy, quick and very satisfying and it more often than not will form a complete meal for me. This is a twist on that salad.

Grilled Fennel with Fresh Mozzarella

10 minutes and this salad is done.

Are you like me? Hate those 6pm meetings that are catered? Few vegetarian options except for chips and other deep fried snacks. I have one of those meetings tonight, but thankfully I have it licked.

Around 4pm I stopped work and made this salad. It is Nigel Slater’s originally, but I have adopted it as my own over time. I do love his way with vegetables. Simple.
