White Bean, Sage and Roasted Garlic Spread

Snacks in this house often include a spread or dip that can be lathered onto crusty bread with some salad greens and tomato slices, or just on its own. Most spreads can be thinned a little and used as a dip with crackers or vegetable sticks. They can even be served as a sauce to accompany falafel, lentil balls or other vegetarian fritters or patties. Try adding them to salad dressing too, for creaminess and flavour. They can even be thinned out to form a great basis for soup!

This recipe is a classic White Bean puree with sage and garlic – some garlic is roasted, and some cooked with the beans for layered garlic flavours. Deborah Madison includes a recipe in her book, Vegetarian Cooking for Everyone.

White Beans with Tahina | White Bean Tahini Salad

This lovely salad is a play on hummus – white beans are mixed with tahini, garlic, and lemon juice for a gorgeous salad. Chickpeas could be used also, for a salad even more closely aligned to hummus.

Once the beans are cooked, it is quite easy to make. While the beans are cooking the pinenuts and spices are toasted and some chilli oil mixed. Once the cooked beans are mixed with the other ingredients, they are allowed to sit for an hour for the flavours to meld and be absorbed by the warm beans.

Verjuice, originally from the Middle East, has been popularised in the West by Australia’s Maggie Beer. Thank you Maggie! Our Verjuice is a little sweeter and more complex than the tradition variety. If you would like to try the Middle Eastern verjuice, seek out ab-ghooreh or hosrum in your Middle Eastern grocery.

Roasted Cauliflower and White Bean Puree | Dip, Sauce and Spread

Cauliflowers were so cheap and I bought a huge one, three times bigger than others. After making the Green Pea Soup (which has cauliflower in it), I estimated there were still 6 more dishes possible from this one cauliflower!

Today’s cauli dish is a beautiful puree of roasted cauliflower with cannellini beans. You can also use chickpeas.

Roasted Red Pepper Salad with Mozzarella and White Beans | Roasted Red Capsicum Salad

Another beautifully coloured salad for Autumn, beautiful reds of the roasted capsicums. Here we toss them with white beans, fresh mozzarella and a little shallot.

Don’t you just love roasted peppers? While you are roasting them for this salad, add another 1 or 2 or 12, so that you can used them throughout the week. I find it easiest to roast peppers and eggplants on my covered BBQ, but you can also do it over a gas flame on your stove, under a grill or in the oven.

White Bean Soup | Zuppa di Fagioli

Here I sit at the (usually) hottest part of the year, and as I write it is a cool day, and wet. So we find ourselves wanting Autumnal food. Having made a risotto yesterday, I am using the remainder of the stock to make a white bean soup – luckily I had the forethought to soak the beans overnight. You have to bless the Italians, right? Simple food with great flavours.

This soup is just gorgeous because the beans just seem to float in this gorgeous broth.

White beans are great – versatile for Summer in Salads, and in Winter for Soups, pasta sauces and more hearty dishes. Use cannellini or haricot beans when white beans are specified. Keep them in your pantry year-round.

Grilled Eggplant Salad with Pine Nuts, White Beans and Pita Chips

Bittman once put together 100 salad recipes in short 2 or 3 line descriptions. I love to turn to these suggestions in the warmer months for inspiration. They are great flavour combinations yet simple and easy to put together, and are great inspiration on hot days when your creativity flags.

Grilled eggplants are always a winner, and I grill them on my covered BBQ. A few red and green capsicums are added alongside, shining from being wiped with oil prior to being placed on the grill. Twenty minutes later the capsicums are charred and the eggplants are soft and collapsed. Perfect bases for salads and soups.

Glorious Five Bean Salad

In this up-and-down weather at the moment, one day 38C, the next down to 20C, Summer trying to heat up but seemingly running out of fuel. We need to vary our food according to weather – when H O T , we do very very cooling dishes, when it cools we look for a little more substance.

Just right for the cooler Summer days is a Five Bean Salad – the beans add substance but it is still a salad, full of the tang of lemon and olive oil, Summery full of parsley.

13 Treasure Happiness Soup | Provencale Vegetable Soup

An Extraordinary Soup

This soup is SO delicious – and makes everyone so happy when they eat it. The name comes from the 13 vegetables in the soup, and that wonderful warm, happiness feeling, but really it is from Provence in France. There it is a summer soup, but the addition here of potatoes, pumpkin and sweet potato gives it that wonderful warmth for winter and early spring, and introduces truly wonderful textural combinations in every mouthful.

My parents believe firmly that vegetables are the path to health, and so a normal meal at their place may consist of many vegetables. The record number of veggies at this time is 12, yes TWELVE, at once on a plate. But with this recipe, I think that I claim the prize. Thirteen in one sitting. Not bad.

Easy White Bean Salad | Easy Cannellini Bean Salad

This salad is ready in minutes

The ability to arrive home from work and throw together a salad or two to go with the main meal – or as a meal in itself – is something that we strive for with our modern “on the go” lifestyles. Using either canned beans or precooked beans that you have kept in the freezer, this salad is ready in minutes. Grab some cherry tomatoes and rocket (arugula) from the corner shop as you walk home from the bus stop, and you are good to go.

PS It is flavoursome too.

Seasonal Cooking | 11 Simple Beautiful Summer Salads

Sometimes we forget that simplest is bestest.

I ran into a lady today from Northern France and we chatted about France and French food. I have spent some time living and working in the North East of France, so it was great to chat to such a beautiful lady.

Coincidentally, I have just started to re-read, Elizabeth David’s French Provincial Cooking. I love the simple approach to food and the reverence she shows to food and eating.
