I have been lying in bed this morning – a cold morning of Autumn where it is nice to be sipping coffee and reading under the warm blankets. I have been watching the sky as I read, wondering what kind of day it will be, and it has varied from bright blue and cloudless, to dark and stormy, and back to few clouds and a bright blue sky. Such are the joys of our Australian weather. We watch the sky in Summer to see what heat levels we need to endure during the day, in Autumn we watch the sky for much needed rain, in Winter it is about how cold and wet it will be, and in Spring we wait for the first warm to hot day to arrive.
So it is nearly Winter and the soup pot has emerged from the depths of the cupboard again. We made an awesome spicy tomato soup the other day, quite Indian in style, and today we turn towards Italy and the simple but awesome products that come out of kitchens. I have heard the food of Tuscany particularly is called Poor Man’s Food, that is, food that is made from locally grown produce without fanciness or pretension. Exactly my kind of food. I remain a country girl at heart despite living in various cities for the majority of my life. The influence of those first 15 – 20 years never leaves you.
I have roasted the broccoli in this dish, but you can just add it to the onions if you prefer to skip that step.

A long time ago I fell in love with Gratin dishes when I was working in Nancy in France. There was an art theatre there that often showed films in English, so I was a regular visitor. Close by, maybe even next door, was a little cafe that served only gratin style dishes. It was very convenient to have a meal and then pop next door to the theatre, so it became routine for me to visit. It was so good, I still remember it fondly, especially its Poire Belle Helene Dessert.
We have a number of gratin dishes here as a result of that little cafe, and today it is a Fennel Gratin made utterly delicious with feta and honey. The recipe comes from Ilva Berreta, food photographer and former food blogger. I miss her blog, it was full of the most delightful stories and recipes.

Cauliflowers – remember the days when it was overcooked by our Mothers, and a watery mush was slopped onto our plates? Eww! Or a dish of cauliflower, overcooked again, covered with cheese and baked? Oh maybe not, you might not be old enough. But thank goodness, the understanding of cauliflower has come a long way since those days. The things we can now do with a cauli! Roast it, grill it, rice it, fry it, deep fry it, the variations are endless.
This is a simple but beautiful soup, the recipe was given to me by the multi-talented Ilva, food photographer and former food blogger. It is so simple and so good, in a gentle sort of way. I have added almonds to her recipe and some white pepper which I love with cauliflower.
