Through Spring, Summer and Autumn we regularly make and drink juices as part of our morning routine. We are lucky enough to have 2 orange trees which fruit at different times, so we have fresh oranges from late Autumn one year through Winter, then Summer, to early Autumn the next year. That is, unless we eat them so quickly there are none left on the tree. Oranges pair well with other fruit and vegetables like Summer stone fruits, apples, other citrus and beetroot. Summer in our house is partly defined by what we drink. Teas, iced teas (infusions), juices, lassi drinks, & range of coolers. Our juices are made with a cold press juicer, and we use both fruit and vegetables.
Cold press juicers are not great at handling fibrous vegetables, so more often than not we will blitz them in the food processor or blender before putting them through the juicer. It is a bit of effort but the results are worth it – sparkling fresh, great tasting, healthy juices. We have them straight from the juicer, but they can also be served over ice or chilled in the fridge. If they do sit for some time after juicing, you may need to give them a good stir before drinking.
Here are a number of unusual but interesting and healthy juices to try. Great in Spring, Summer and Autumn. I will normally add a lemon wedge and a knob of ginger to all juices.
In heatwave conditions there is nothing like something cool and refreshing to drink and to help to keep our liquid intake at good levels. My routine each morning is to make our juice, tea or infusion (to be iced), coolers, iced coffee or lassi drinks ready for the day. Our afternoon tea, in the hottest part of the day, is usually in the shade of trees (if the temperature allows) or in the air conditioned kitchen by the large windows. Sipping something cool or icy on these days is heaven.
Many of our hot teas and infusions are perfect in Summer when iced. Just adjust the recipe to infuse, cool, then refrigerate. Use spices or herbs for iced infusions.

Spring and Summer mean strawberries and blueberries, and often they are so cheap that it is worth grabbing several punnets when shopping. Ok, blueberries are never cheap, but sometimes they are cheaper. Both make great icecreams, jams, frappe, lassis and smoothies. And they are wonderful juiced.
Spring is the time we bring out the juicer once more, and begin our routine of a daily juice. We are publishing a series of our common juice combinations, and today is focused on beetroot. It is nearly Spring time, the garden is blooming (my first ever daffodils are flowering), and we have started juicing our own drinks again. We love to have home-made juices through Spring to Autumn.
While the apples are at their best, they are especially suited to late Winter and early Spring juices, providing a sweet base for many different combinations.
In the suggestions below, we don’t include quantities. My rule of thumb is – 2 large apples plus your combination fruit and vegetables will a little water to dilute the intensity of the flavours, will make 3 – 4 glasses. Enough for breakfast for a small – medium family.
In case you are wondering, I use Harom, a cold press juicer, but any juicer will make great drinks. I love cold press juicers because of the way that they extract the juice and the drinks are not as frothy as when you use a centrifugal juicer. It is also said that cold pressed juices are more nutrient dense than those produced with a centrifugal juicer. However the cold press ones do not handle greens or stringy vegetables such as celery as well as the centrifugal ones.
You can also make fruit juices in your High Speed Blender. I use a Vitamix. Simply blend the fruit for 2 or so minutes with a little water, then strain the juice as your pour it into a jug or into glasses. (I am not sponsored in any way by Vitamix or Harom.)

Man, it is hot, and that sound is the sound of records breaking. As I write it is mind numbingly “warm”. Although it is such a slow start to Summer, these first days of heat are some of the hottest recorded. And people say climate change is not real.
So the rhythms of the kitchen change, and first thing in the morning we decide what to pop into the fridge for late-afternoon-on-the-deck cool sipping. There are quite a few recipes around for Apple Green Tea iced drink, and I tissied them up a bit, to suit our tastes and the items on my kitchen bench this morning. I do hope you enjoy it!

How hot can Summer days get! Even the days before Summer officially begins can have a real bite. On those days you can reach for the coolness of white wine, of course, and in this house we make a range of lassi drinks, fruit juices and iced cordials.
One thing we love is to reach for the Zucchinis and make a healthy and refreshing juice, guaranteed to combat the heat without putting a wobble in your step.
Who knew that zucchini juice is so good? I discovered it one recent summer when my neighbour kept gifting me huge zucchinis from their organic farm. There are only so many zucchinis a girl can eat! They don’t really dehydrate well, and I had made enough zucchini pickles and preserves to last all winter. So I decided to try juicing them. It was a revelation.
I am here to tell you that zucchini juice is amazing! On its own or mixed with other fruits and vegetables, it is pure refreshment in a glass on a hot morning, afternoon or evening.

As soon as the hot weather hits, thoughts turn to iced drinks and drinks that are cooling on the system. Iced teas, iced coffee and juices are our go-to coolers. This juice uses watermelon and is delicious! It is best to buy watermelon later in the season, no early watermelons. They are lacking in the true watermelon taste.
Don’t be afraid to add other cooling juices to the watermelon. Strawberries go very well with this. Cucumber and zucchini too, although green and red juices together go a murky colour. They taste amazing, but are not so visually appealing.
