Marinated Roasted Mushrooms

This is a favourite recipe for mushrooms – shiitake, portabello, field mushrooms, brown mushrooms – and the mushrooms can be roasted in the oven, cooked in a covered BBQ, or grilled. Your choice. Today, they have been made in the oven, but BBQing them is a real favourite.

To BBQ them, they go into a foil pan that has been oiled lightly. They can even go straight on the grill for the BBQ. For the oven they perch on a baking paper lined tray.

Before cooking, the mushrooms are marinated in a mixture of garlic, ginger, chilli and coriander, with a touch of honey.

Baked Marinated Tofu

There is a magnificent Asian grocer near us, their shop is so large it goes on and on. And, well, it has inspired me to play more with tofu. They have every variety from Five Spice Tofu to Deep Fried Tofu, to the hardest firm Tofu to the silkiest Silky Tofu.

For this recipe, I used really firm tofu. It is first marinated then baked for a delightful snack or summery side dish. It is a perfect dish, sticky and dark. Eat with a green mango salad. Or a crunchy, herby, green Asian Style Salad.

Salad of Marinated Zucchini and Tomatoes

Zucchini takes extremely well to marination, particularly with Mediterranean flavours such as garlic, olive oil, oregano. Mix them up and leave for 30 mins – 1 hour, then serve. You can mix them with Bocconcini, for example, or, like this recipe, with some beautiful tomatoes. Fresh, young zucchini has the most glorious texture.

I have used small cherry tomatoes here, but use any tomatoes you have – halving or slicing them depending on the size. I like to mix green, semi ripe and ripe tomatoes as it gives variation in flavours, but this is probably only possible if you or your best friend grow your own tomatoes. Green tomatoes are difficult to find these days, yet I love them.

Throw in a small zucchini flower or two if you have them.

Peach Salsa with Marinated Tofu

Let’s celebrate Summer with its perfect stone fruits – and Peaches reign supreme during the Summer months. This is a quick and easy salsa with peaches. It can be used in any way you like, but here we have paired it with marinated tofu. The tofu is definitely optional – for example the salsa would go well with haloumi, or in lovely little lettuce cups. It would make a light lunch with some Middle Eastern flatbread. Chunks of watermelon, slightly salted, with the Peach Salsa on the side.

Tofu has a wonderful ability to absorb flavours and marinating it is such a pleasurable way to turn blandness into flavourful nuggets.

Eggplants, Garlic, Lemon and Rosemary | Marinated Eggplants for the BBQ or Indoor Grill

Late Summer and Autumn are the best times for BBQs.

As we launch into Autumn, every sunny day is precious. While the sun shines, marinate some eggplant and toss it on the grill for a smoky lunch with some BBQ’d onions, hot lentils and a salad.
