Matki and Golu Kola Salad with Coconut | Moth Bean and Pennywort Salad

Golu Kola aka Pennywort is a bit of a super food with amazing properties. Occasionally I can find it at the local Asia grocery – a joy because it is used across Sri Lanka and India. In Sri Lanka a sambal is made, but today I took that a step further and made a salad with a base of Moth Beans (Matki, also called Vallarai).

It is very easy to make and matki takes under 30 mins to cook, so you can make it in the morning while you are pottering around getting ready for work, and then it is ready to have with dinner when you get home.

Other common recipes using gotu kola include a healthy infusion of the leaves, Gotukola Kenda – a soupy rice dish, a pachadi, poriyal, and Vallarai Keerai Kootu.

Balinese Sambal Dabo Lilang | Indonesian Tomato Relish with Lime, Chilli and Basil

Indonesian sambals are  fiery blends of fresh hot chillies and other seasonings that are used as relishes or condiments throughout Indonesia. There are dozens of different sambal recipes; some raw, and some cooked. A sambal is served in much the same way we might use sriracha or tabasco sauce.

They are generally easy to make, especially the raw ones, and this sambal takes no more than 5 minutes. The onions and chillies cure in the lime juice, making it incredibly delicious. Drizzle it over everything for spicy hot flavours. This recipe is the same as Sambal Iris, except that it has basil added to it. It changes the flavour and makes it even more delicious (if that is possible).

Okra with Sambal and Coconut Rice

Another dish from Ottolenghi, this one was inspired by one of his trips to Malaysia. It is a loose take on Nasi Lemak, definitely the country’s most popular breakfast. But be warned: it is quite spicy. You can make the spice paste with far fewer chillies than Ottolenghi prescribes – feel free to just use half a fresh chilli and half a dried chilli if that is to your taste. In actual fact, we make this recipe with the sambals and sambal style chilli mixes that we have on hand (quite a few) rather than make his, and I have included both his recipe and links to our other pastes, purees and sambals that are suitable.

We like this variation on typical okra recipes. In this one the okra is simmered for a few moments only and then served mixed with the chilli-onion sambal on coconut rice. Use the freshest and best quality okra, because it is cooked so briefly.

Don’t omit the crispy fried shallots (available from Indian and Asian grocers) or the coriander. They add some texture and flavour to the dish that is essential to the overall impact.

Steamed Mustard Greens and Shiitake Mushrooms with Sambal Matah

Today we have a lovely dish of mustard greens with a taste of Bali. A quick sambal is made with lemongrass and kaffir lime leaf, which is then mixed with steamed mustard greens. The dish is topped with something crispy – I often use garlic chips or crispy fried tofu, but fried shallots or even potato chips or sweet potato chips can be used.

Note that Kai Choy or Gai Choy is the Cantonese name for Mustard Greens. It is also known as Indian Mustard, Leaf Mustard and Mustard Leaves.

Sambal Tomat | Vegetarian Version of Balinese Tomato Chilli Sambal

This is a great Balinese Sambal based on tomatoes and shallots. It has been vegetarianised, using miso and seaweed flakes to add the salty sea taste to the sambal. This is not so unusual as miso, tofu and tempeh are made in Bali backyards.

You can add other items to this sambal, such as diced eggplant, ginger, curry leaves, even watercress and nuts. This is the basic version, and it can be served with any meal e.g. white rice, nasi lemak (Balinese Coconut Rice), nasi minyak (Balinese ghee rice), thosai, roti chanai.

Balinese Sambal Iris | Onion, Tomato and Chilli Condiment

Of course, our ingredients here are different to the ingredients available in Bali. Our chillies are different, our onions are different, rices are different, and so forth. So when we cook Balinese dishes there will be a difference to the traditional ones. But the flavours will still be so good. Plus, that gives us some leeway to play with the traditional recipe, adding freely available, local ingredients. I love to include cumquat juice and zest and kaffir lime leaves. Coriander and/or Basil leaves go nicely too.

Steamed Thai Eggplant and Zucchini with Chilli Paste and Cumquat or Lime

I love this!

My friend Kate recently told me how good steamed Thai eggplants are with a chilli paste. In need of a quick snack while prep’ing for the large dinner on Xmas Day, I threw some in the steamer with left over zucchini, grabbed some chilli paste from the fridge and chopped up some cumquats. I love this!

I can imagine these eggplants served in a row on a narrow white plate, each one on a salad green leaf, ready for eating picking up and putting straight into the mouth. Also in this pic are some steamed betel leaves,  and a pea shoots and chopped cumquats salad.
