Snake Bean Sambar

Sambar! That one word is enough to have us running to the table. Today’s sambar is made with Snake Beans, also called Long Beans. It has a base of onion, carrot and potato. I have broken one of Meenakshi Ammal’s cardinal rules – only one vegetable per sambar – but I’ve kept the onion, carrot and potato to small amounts. I don’t think she will mind.

Green Papaya, Snake Bean and Tomato Salad

Celebrating tomatoes, we are making tomato salads each day this week. It is the middle of Autumn and the last of the best tomatoes are available – soon the less flavoursome winter tomatoes will be available. We have been making simple, Mediterranean and Middle Eastern salads, and some more unusual ones. Today we use cherry tomatoes with green papaya in a South East Asian style salad. I hope you enjoy it.

The salad incorporates the papaya with the tomatoes along with snake beans and shredded snow peas. The dressing is sweet and added texture is given with peanuts. I like to add some crispy fried onion too, the type you can buy from Asian and Middle Eastern shops. It adds a salty textural element.

Ma Karal | Sri Lankan Snake Bean Curry

At last we have a snake bean dish for you. Snake beans are generally available at Asian and Indian groceries. They are long beans, with a tougher outer layer than, say, our green beans. They are terrific in Asian and Indian dishes. Today we make a Sri Lankan curry, using Coconut Milk, Pandan and the Sri Lankan Curry Powder, Badapu Thuna Paha. If you can’t find this spice mix in your Indian and Sri Lankan groceries, and don’t want to make it, use any warming roasted curry powder (as spicy as you like – or not). At a pinch you could use Malay Curry Powder, Sambar Masala or Garam Masala.

Green Beans are a good substitute for Snake Beans if you can’t locate the longer ones.
